Why does Horizon use rye?

Some of the noted benefits of rye are that it may lower the risk for some cancers, may lower serum cholesterol levels and may also be helpful in weight control.

Rye flour has low gluten content relative to wheat flour, and contains a higher proportion of soluble fiber. Soluble fiber undergoes active metabolic processing via fermentation in the gut, yielding end-products with broad, significant health effects.  Rye products generally have a lower glycemic index than wheat and other grains, making it especially healthy for diabetics.

Rye is also used as an alternative medicine in a liquid form, known as rye extract. Rye extract is a liquid obtained from rye and similar to that extracted from wheatgrass. Its benefits include a strengthened immune system, increased energy levels and relief from allergies.
